Behind every flawless dish is a perfect ingredient selection, as well as a team whose job is to find them and ensure they will surprise and delight diners. “We are lucky enough to have a tropical climate in the Riviera Maya and the Yucatan Peninsula that is similar to Thailand, which allows us to work with local produce,” explains Chef Oscar, adding that between 60% and 70% of vegetables are sourced within the region. 

Other delicacies, though, come straight from the source. “We import products like coconut milk and fish sauce from Thailand through highly qualified, certified vendors,” says Chef Oscar. Above all, he and the team make traceability a priority. Whether an ingredient comes from a local farm or Asia, sustainable practices are essential. 

 

Tradition and Innovation: A Unique Vision of Thai Food at Saffron

“Around 80% of menu items are corporate recipes that we must follow to the T,” says Chef Oscar, “and we can play around with the other 20%.” Using local ingredients like shrimp and sea bass, and adding their own creativity, Chef Oscar and his team leave their own mark on the menu. 

Another key element: personalization. “We can adapt the level of spice to our diners’ taste, ranging from super spicy to mild,” says Chef Oscar, adding that the team also takes allergies and dietary restrictions into account to ensure a seamless dining experience for every guest.

The menu at Saffron is as extensive as it is inspiring. Whether it’s your first visit or you’re a regular, there are certain stellar dishes that you simply cannot miss. “I always recommend the pad thai –rice noodles with spicy tamarind sauce and shrimp or chicken,” says Chef Oscar. “We also serve a very traditional dish called Phad Kaprao Nuea, which we prepare with sautéed tenderloin. It has plenty of flavor, thanks to the presence of garlic, chili, and basil.” Other favorites? Gaeng Kiew Wang Gai (green curry with chicken), Thom Kha Gai (chicken soup with coconut broth), and Mango Sticky Rice for a grand finale.
